
This easy vegan pizza recipe is guaranteed to be a hit amongst vegans and meat-eaters alike. The dough is super simple to make and you can be as creative as you like with the toppings!
In a large bowl mix together the flour, yeast and sugar. Add the salt and pepper.
Gradually mix in the water to make a soft (but not sticky) dough.
Knead the dough on a lightly floured surface for 10 minutes, or until it is smooth and elastic
Leave the pizza dough to rise in a warm place for 30 minutes
Cut the dough into two pieces and roll each one into a rough circle (about 30cm). Put them on a pizza pan (ideal) or ungreased baking trays.
Put all the tomato sauce ingredients in a food processor/blender
Once blended, lightly heat it in a saucepan, set aside
Preheat oven to 220°C (425°F)
Spread each circle dough base with the tomato sauce (leave about 1cm from the edge)
Evenly add the mushrooms, courgette rings, peppers, asparagus spears and olive over the top.
Sprinkle over the vegan cheese and add a generous drizzle of good quality Extra Virgin Olive Oil (I used Colive Olive Oil)
Bake in the preheated oven for 8-10 minutes until the edges are golden and the cheese has melted
Once cooked dot round the smashed avocado for some extra creaminess
